Chocolate Pudding...the Healthy Way

This afternoon I was hungry for chocolate pudding...and knowing I didn't want to make it the SAD (Standard American Diet) way, I went looking and found it on www.happyfoody.blogspot.com
 
Here is the recipe. Check out this blog. There are many other delish looking recipes on here! And good ones for your health, that is the greatest part of all!
 
Raw Chocolate Pudding
This is a delicious and unique (not the mention healthy!) recipe. It was very simple to make...the only time involved is soaking the dates. Try this straight off the spatula or frozen. There is another version here (it's a little more gourmet...but Renee is one of my favorite chefs...so I had to mention it!). No photo today...you'll just have to make it yourself! Yum!

Raw Food Made Easy for 1 or 2 People

Yeld: 1 cup, 2 servings

1/4 c. pitted medjool dates, soaked*
1/4 c. pure maple syrup
1/2 tsp. vanilla extract
3/4 c. mashed avocados (1 1/2 avocados)
1/4 c. plus 2 tbsp. unsweetened cocoa or carob powder
1/4 c. water

Place the dates, maple syrup, and vanilla in a food processor fitted
with an S blade and process until smooth. Add the avocado and cocoa
powder and process until creamy. Stop occasionally to scrape down
the sides of the bowl with a rubber spatula. Add the water and
process briefly. Stored in a sealed container, it will keep for
three days in the refrigerator, or two weeks in the freezer. Serve
chilled or at room temp.

FOR DOUBLE BATCH:

Increase amounts to 1/2 c. dates, soaked, 1/2 c. maple syrup, 1 tsp.
vanilla extract, 1/2 c. mashed avos (3 avos). 3/4 c. cocoa powder,
and 1/2 c. water. Yield: 2 cups, 4 servings.
 
 
It was a hit at our dinner table tonite, especially since I took this pudding and layered it into goblets with sliced bananas and garnished with shredded coconut.

Blissful Summer...

Summertime
...ah the sweet smell of roses, violas and lavender wafting on the evening air...the smell of rain on after a humid summer day and evening brings thundershowers. Summer...crisp white blossoms of daisy against blue, blue skies...slender strands of fountain grass moving gracefully in the wind...a Father's day bike ride along an old railroad bed, pleasant shade across the path and pausing to let the children splash in the shallow creek...Bible memory time in the evenings on the front porch, the soft splashing of the fountain a soothing backdrop to our togetherness...gardens lush with growing veggies: broccoli, snow peas, green beans, potatoes, kale, romaine and spinach...frosty lemonade and meadow tea on warm afternoons when work is finished and we settle down with a good book...long hours of sunlight to light our days and cool nights, the laughter of children wafting on evening breezes as they gleefully catch fireflies...the sweet scent of hay borne on warm summer winds as it is gathered into barns and bunks for winter's cold...what an awesome month, created by the God of the universe who loves beauty and variety.

Delicious Drinks...

It's a chilly but sunny spring morning here at my house...I'm enjoying a cup of warm chai latte and thought I'd share a few healthy drink suggestions in place of the sugary drinks alot of Americans are used to drinking.
 
Chai Latte
 
Into a 12 oz mug, pour 4 oz. hot water. Steep 1 bag Chai Tea of choice for 10 minutes. Add 1 t. sweetner of choice (I use Agave or maple syrup) and fill the mug the rest of the way with milk of your choice (almond or rice are nice). Enjoy...
 
Icy Strawberry Lemonade
Into a blender or Vitamix, pour 1 1/2 c lemon juice and 1 cup sugar. Blend well. Add 1 c. whole frozen strawberries. Fill the canister with ice. Let sit for 1/2 hr then blend until the consistency of Italian ice, very fine but frozen. This is an awesome treat on a hot summer afternoon while sitting on the front porch enjoying the flowers...
A variation of this would be to eliminate the strawberries or to have strawberries and lime juice instead of the lemon.

Healthy Sandwiches

Are you a sandwich fan but perhaps are reducing your intake of animal products? I have a few suggestions for you.
One suggestion is a pita pocket salad. Spread some hummus into a pita pocket and stuff it with veggies of your choice...greens, shredded carrots, thinly sliced tomatoes, peppers, onions and mushrooms. Yum!
Or, you could buy some sprouted whole grain bread (such as Ezekiel bread) and spread a pate over it made with walnuts. I'll try to post a recipe for hummus and pate in the next few days. Add to this: thinly sliced tomatoes, onions, peppers, and thick slices of "meaty" mushrooms. This is awesome.
Or, you could make some guacamole with avacodoes and use that as your sandwich spread on the bread.
The options are many. Play around with what suits your tastes and enjoy.

My Sister

God has been kind to me to give me a sister who loves me unconditionally in spite of all my faults and short comings. Altho we are only sisters thru several summers of living in the same household and now because of the adoption into the family of God, we sure think enough alike that it is almost scary at times!
Altho she lives far away from me, I get a whole week with her! Awesome! How will we cram into this one little week all the things we wish to do? Garden. (Mulching exercise!) Biking. Recipe exchange. Worship with our little ones on the front porch in the evening twilight with the fountain's melodious music and clove-scented dianthus to enhance our togetherness...Hiking. Watching good movies. Laughing over past memories. Making salads and raw meals in the kitchen. Thrift shopping. Sewing. Who knows, when we two are together, we can accomplish anything.
Thank You, Dear God, for a sister.
