Are you a sandwich fan but perhaps are reducing your intake of animal products? I have a few suggestions for you.
One suggestion is a pita pocket salad. Spread some hummus into a pita pocket and stuff it with veggies of your choice...greens, shredded carrots, thinly sliced tomatoes, peppers, onions and mushrooms. Yum!
Or, you could buy some sprouted whole grain bread (such as Ezekiel bread) and spread a pate over it made with walnuts. I'll try to post a recipe for hummus and pate in the next few days. Add to this: thinly sliced tomatoes, onions, peppers, and thick slices of "meaty" mushrooms. This is awesome.
Or, you could make some guacamole with avacodoes and use that as your sandwich spread on the bread.
The options are many. Play around with what suits your tastes and enjoy.
