According to Dr. Fuhrman, a medical doctor interested in getting people healed thru nutrition, eating alot of cruciferous vegetables is the best way to beat cancer, among other illnesses. It is hard to eat enough of these in a day's time and I've discovered a grand invention for getting more of these good foods in my diet: Smoothies. Don't turn up your nose just yet. They don't have to be green or a tastebud turnoff. Check out a few recipes below that I have come up with. Even my finicky daughter eats these with gusto. My family each has their smoothie for breakfast before eating their meal and it gives me great pleasure to be serving them a salad at every meal, even breakfast!
Blushing Peach Smoothie
Into a blender, place 1 banana, 1/4 cup maple syrup, 1 tsp vanilla, the juice of 1 orange, 1/2 cup water and 4 cups baby spinach leaves (or 4 large handfuls regular spinach). Blend until smooth, scraping the sides down as needed.
Add: 3 cups frozen, but mostly thawed peaches
1 cup frozen cranberries
1 cup frozen blueberries
the "meat" of 1 grapefruit (I scoop it out as I do for eating to avoid the pith)
several fresh mint leaves
1 tsp. cinnamon
Blend until smooth.
Enjoy fresh or pour into paper cups and freeze to be used as needed.
Strawberry Supreme
Into a blender, place 1 banana, 4 cups baby spinach leaves or 4 large handsful regular spinach, 1 tsp vanilla, 1/2 cup ground flax seeds, 1 tsp cinnamon, and 1/4 cup maple syrup. Blend until smooth. Add: 4 cups fresh or frozen but partially thawed strawberries, 1 cup frozen blueberries. Blend until smooth. Eat fresh or freeze in paper cups for convenience food later.
I have not experiemented with other veggies outside of spinach yet, but I'm told that kale works pretty well in these smoothies, too. Try them. They're delicious and I love making ahead and freezing extra so that when I get hungry, they're ready for me and I am not tempted to put other foods in my mouth when I haven't had the amount of greens I should have had for the day.
