My mother's old faithful Celery Seed salad dressing is a faithful standby in my house. My husband and 2 of my 3 children really like this, as do I. Following is a suggested tossed salad that works great with this dressing. However, use your own inspired ideas when it comes to combining veggies for your salad.
Cia's Tossed Salad
1/2 "head" broken green or red leaf lettuce (or mixed)
1 large carrot, shredded
1/2 green or red sweet pepper, diced
2 stalks celery, diced
1 cup finely chopped cauliflower
1/2 cup raw sunflower seeds
2 vine ripened tomatoes, diced
In a large salad bowl, toss all ingredients. Serve Celery Seed Dressing on the side.
Celery Seed Dressing
1 cup expeller pressed canola oil
1/2 cup "EDEN" (or similar brand) raw red wine vinegar
1 cup evaporated cane juice, or demarra sugar ("raw" sugar)
2 tsp mustard
1 1/2 tsp salt
2 tsp celery seed
Blend in a blender or shaker until oil is well mixed with other ingredients. Enjoy!
Add to your salad, a steaming bowl of baked rice (see following recipe) or a baked potato.
Baked Rice
1 cup brown rice
2 cups hot water (if using butter for non vegan recipe) or vegetable broth
2 T butter (optional) or oil
1 tsp salt
2 T parsley flakes
1/2 tsp black pepper
Place all ingredients into a baking dish. Stir to coat rice with butter/oil. Cover and bake at 350 degrees for 1 hour. Toss and enjoy!
For dessert, how about a lovely tray of fresh fruit. Make an eye appealing array of fruits by combining grapes, apple slices, bananas, kiwi slices and/or orange slices.
It has been said that serving food attractively makes the meal much more appreciated. Those of us trying to change our ways from junky eating to healthy eating are much more inclined to "desire" these dishes if they are appealing to the eye. So go ahead, give it a try. You'll be pleased with the results!
