Rawlicious Foods

Eating alot of our foods raw is a good way for us to receive the vitamins and nutrients we so desperately need for health and fitness. I am a farmer's wife and I so often say that we have the feeding/tendiing of the cows figured out so well, but humans ignore their own health for the pure pleasure of eating processed foods and the comfort foods we Americans are so noted for.
 
I have come to enjoy a good Greek salad chock full of gorgeous vineripened tomatoes, black olives, green leaf lettuce and cucumbers along with a smidge of garlic, and my own special house dressing which I shall share below. To round out a meal with Greek salad, you could include warm garlic toast made with whole grain bread, garlic powder and a bit of butter and for dessert: Tropical Fruit Salad. Below I will share recipes for both the Greek salad and the fruit salad. But first, let me share my house dressing recipe. This dressing is a standard in our house for making broccoli/cauliflower salad, a dressing to pass with a tossed salad, tuna or chicken salad or Greek salad. It is one my husband soon asks for if it goes missing too many days.
 
Cia's House Dressing: 1 cup mayonnaise
                                  1/2 cup red wine vinegar
                                   2 T evaporated cane juice
                                   1 clove freshly pressed garlic
                                   1 T mustard
Mix well. Store in airtight container in fridge for up to 4 weeks.
 
Cia's Greek Salad: 1/2 head green leaf lettuce, cut into small pieces
                              3 vine ripened tomatoes, diced
                              1 can sliced black olives
                              1 small onion, finely diced
                              2 stalks celery, diced
                              1/2 cup Cia's House Dressing (see recipe above)
Toss vegetables with dressing and chill 30 minutes before serving.
 
Cia's Tropical Fruit Salad: 1 cup fresh pineapple chunks
                                        1 cup apples, coarsely grated or diced
                                        1 cup red grapes, halved
                                        1 cup kiwi slices
                                        1 cup diced oranges
                                        2 T grated coconut
                                     Dressing: 1/2 cup freshly squeezed orange juice
                                                    2 T honey or agave
                                                    1 t. ground ginger
                                                    1 t. ground nutmeg
Toss all fruit with dressing. Sprinkle coconut over dish and chill 30 minutes before serving.
